The name Maseul originates from the Korean Satoori dialect spoken in the southwestern provinces of Jeolla. It translates simply to "village" however Maseul implies much more. It describes the act of stepping out to interact with your neighbours, going "off to the village" to connect and share. Buy produce, sell produce, repair a tool, have a meal with friends or just sit under a tree in the village square.
That spirit of village defines our kitchen. We are focused on East Asian dishes that bridge the gap between traditions and the unique region of Dorrigo and it's surrounding areas. By using techniques of fermentation and preserving in almost every meal, we create deep, complex flavours that honour the seasons and those who grow it.
We are committed to using as much local produce as possible, supporting the farmers and makers of the area whilst celebrating seasonal dishes, festivities and the daily life of Dorrigo, it's surrounding areas and beyond.
